Sweet-corn bread — Suikermieliebrood
Stephanie Bekker from Naboomspruit was born and
bred in the beautiful Namibia. She has a wonderful and easy recipe
for a microwave sweet-corn bread.

Ingredients:
2 cups self-raising flour
2 desert spoons oil
2 eggs
2 tablespoons sugar
1 big tin sweet-corn
paprika
Method:
Prepare microwave bread pan and sprinkle
sides and bottom with paprika.
Mix self-raising flour, oil, whipped eggs and
sugar.
Add sweet-corn.
Pour in pan and sprinkle with paprika.
Microwave 9 minutes on DEFROST and 6 minutes
on HIGH.
Serve with butter.

1 groot blik suikermielies

Metode:
Berei mikrogolf-broodpan voor en sprinkel paprika teen kante
en op bodem.
Meng bruismeel, olie, geklitste eiers en suiker.
Voeg suikermielies by.
Gooi in pan en sprinkel paprika bo-oor.
Mikrogolf 9 minute by ONTVRIES en 6 minute by HOOG.
Sit voor met botter.

 | KOEKSUSTERS
Sweet and syrupy koeksisters -
one of the best-known local delicacies - are also called "koesisters".
They are related to their Malay counterparts and also to doughnuts;
the Indian version is usually rolled in desiccated coconut before
serving. In some variations the dough is made with yeast. Serve
these South African treats with tea or as dessert.

Ingredients :
8 cups Flour |
½ cup Butter |
| 2 T sugar |
4 Eggs |
| 1 tsp. Baking
Powder |
2 cups Milk
(approximately) |
| Method:
Mix all dough ingredients together to form dough. Roll out, cut
and plait. Fry in hot oil until golden and immediately submerge in
COLD syrup. |

(to be made in advance and frozen) |
| 12 cups Sugar |
6 cups Water |
| 2 T golden syrup |
3 - 4 pieces
whole, fresh ginger |

| Boil all syrup
ingredients together. Remove from heat, cool and place in freezer
overnight.

 | VETKOEK
A typical South African
accompaniment with braaivleis. Enjoy the natural taste of this rich,
oil-fried cake, or cut in half and spread with butter and jam.

| 1kg Bread Flour |
15ml Salt |
| 10ml Sugar |
10g Anchor
Instant Dry Yeast |
| 60g (65ml)
Margarine |
650ml Lukewarm
Water |

| Method : |

| Mix the flour,
salt and sugar together. Add the yeast and mix. Rub the margarine
into the flour with your fingertips. Add the water and mix to form
a soft dough. Knead the dough well for 10 minutes until smooth and
elastic.
Place the dough on a lightly floured surface. Cover with
greased plastic and leave to rest for 15 minutes.
Knock the dough down, divide into 36 equal pieces and roll into
balls. Place on a lightly floured surface, cover with greased
plastic and allow to rise in volume. About 15 - 20 minutes. Deep
fry in hot oil until golden brown. Remove from the oil and drain
on brown paper. Serve with your favourite jam or else a savoury
mince mixture.
